This delightful coffee comes from producers Elias and Shady Bayter at El Vergel Estate, where the coffee plants grow surrounded by guava trees. In anaerobic processing, the coffee cherries are fermented in a vessel with no oxygen (as opposed to out in the open), which slows fermentation, allowing a distinct spectrum of flavors to develop in the coffee. This rich and complex cup boasts notes of freeze-dried raspberry and chocolate, with a refreshing citrusy acidity.
In order to ensure freshness and quality, we do not pre-grind our coffee. We recommend grinding right before brewing.
Please Note: Due to limited quantities, we roast Reserve coffees every other week.
